Winemaking Criteria

A patient waiting period was observed in order to get Chenin Blanc grapes overripe, through passerillage and noble rot. It was then hand-picked through sortings: it took 3 times to select the grapes, depending on how ripe they were. We carefully process the harvest: bruised stalks are removed, followed by a soft pressing in a Bucher pneumatic press.

A natural and slow in-tank fermentation is made over several weeks (without any yeasting): through different tastings, Hervé Tijou decides to stop the fermentation once balance is obtained. A meticulous in-tank elevage is made over 90 % of the cuvée, the 10% remaining went into 400L oak barrels to emphasize all the inherent aromatic features of the Chaume terroir, with careful oxygenation. Bottling occurred in September 2016.

A Sensory Experience

Heady and magnificent, the golden yellow robe shows its amber hues. The nose develops a harmonious complexity between cooked fruits (apricot, peach…) and cooked exotic fruits (pineapple, comfit citrus fruits, kumquat…). Notes of spices and wood bring a great smoothness. The mouth is rich, sweet and smooth. Aromas of exotic fruits give all the complexity, underlining its freshness and its structure.

Wine and Food Matching

Served at a 5 to 6°C temperature (41 to 42.8°F), Coteaux du Layon 1er Cru Chaume encourages conversation and will perfectly match:

  • Duck or goose Foie Gras, half cooked or sautéed
  • Confit gizzard and duck magret salad
  • Blue-veined cheeses (Fourme d’Ambert…) along with a pear poached in Chaume, or lying on gingerbread
  • Pear Charlotte or warm Tartes Tatin

Our Chaume will favorably evolve over several decades.
