Winemaking Criteria

We patiently waited to get the Chenin Blanc grapes overripe, mostly with noble rot on this 2017 vintage, and a bit of passerillage due to a perfect exposure to the sun in this wonderful late fall. Grapes were early hand-harvested through 2 to 3 sortings depending on the plots, from September 14th to October 6th.

Natural and slow in-tank fermentation occured without any yeasting, over several weeks. Through different tastings, Hervé Tijou decides to stop the fermentation once balance is obtained. We then proceeded to a meticulous in-tank elevage to keep all the fine aromatic features, until spring 2017, when the wine was bottled.

A Sensory Experience

It’s a great pleasure to look at the golden robe, with its bright and crystal-clear straw-colored hues. The nose is nicely smooth and complex with aromas of stexed apricot, quince jelly and roasted pineapple. The Anjou Loire Valley terroir is underlined by the typical mineral smell of schist.

The mouth is delicious, perfectly balanced between aromas of fruit jelly and a nice fresh structure. This Coteaux du Layon is really harmonious.

Wine and Food Matching

Served at a 4 / 6°C temperature (39,2 to 42.8°F), our Coteaux du Layon is very easy to taste and ideal for aperitifs, and goes extremely well with:

  • Duck foie gras, half-cooked or fried, with its white acid fruits
  • Confit gizzard and duck magret salad
  • Some poultry, white meat, or tender fishes, with its creamy Coteaux du Layon reduction sauce.
  • Blue-veined cheeses: Bleu d’Auvergne, Fourme d’Ambert, Roquefort…
  • Warm tart Tatin, pear and almond paste tarts, apricot tarts, rhubarb tarts…

Its potential might reach 20 to 30 years! And is already enjoyable over the next 3 years: don’t wait for tasting!
