Winemaking Criteria

We patiently waited in order to get the best over ripeness of Chenin Blanc grapes and noble rot. It has been hand-harvest at the end of October 2014 in the plots, selected and shaped during the summer. We then observed a careful process of the harvest, removed bruised stalks and delicately pressed the grapes in Bucher pneumatic press.

The natural and slow fermentation, without any yeasting, occured over several weeks, a part in stainless steel tank, another in 400L oak barrels. Right before the end of fermentation, after several tastings,we proceeded to a  meticulous elevage in 400L oak barrels in order to keep all the fine aromatic features, until Spring 2016, when the wine was bottled. 

A Sensory Experience

The canary-yellow robe is bright with its delicate golden bronze hues, revealing the great overripeness of Chenin. The nose of lime tree and lemongrass is fresh and intense, followed by aromas of white and yellow cooked fruits (apricot, wild peach…), ending with notes of soft spices (clove and cinnamon…). The palate is marvelously well balanced, very sweet much like the overriped Chenin grapes. This sweet wine has enough freshness to galvanize the final, sign of a great Loire Valley wine.

Wine and Food Matching

This conversation wine should be served at a 5 to 6°C temperature (40 to 43°F), after a several-hour carafage in order to develop its aromatic potential. Coteaux du Layon Beaulieu might be served with:

  • Goose and duck foie gras, half cooked or fried
  • Confit gizzard and duck magret salad
  • Some poultry, white meat, or tender fishes, with its creamy Coteaux du Layon reduction sauce.
  • Blue-veined cheeses: Bleu d’Auvergne, Fourme d’Ambert, Roquefort…along with poached pear in Layon, or with some gingerbread…
  • Warm tart Tatin, pear and almond paste tarts, apricot tarts…
  • Every dessert with white fruits, sweet and sour: roasted pineapple with butter and rum, white fruits gratin, rhubarb tarts…

This wine is already perfect for a festive and delicious tasting.
