Winemaking Criteria

We patiently wait for a beautiful ripeness of Chenin Blanc and a wonderful harvest on October 10th and 14th, 2014. Its current aromatic complexity, its perfect balance and its aromatic persistence result of a meticulous elevate:

  • 8h pre-fermentation maceration in the press
  • Twice settled out, with a stabulation on fines lees in order to enrich its structure
  • While barrel-fermented in 400L new oak barrels with a controlled temperature of 17-18°C (62.6 - 64.4°F)
  • During the elevage, thanks to a careful oxygenation in oak barrel and an ageing on lees during 12 months
  • Bottling occurred in November 2015 after filtering and a very limited addition of sulfites

A Sensory Experience

 A bright beautiful canary-yellow robe, with delicate golden hues, a sign of the perfect ripeness of Chenin Blanc. The nose is warm and smooth…It gives us the whole mineral complexity of the Anjou “Cru”. Then come the ripe white fruit aromas, a hint of caramel, and the wonderful wooden smoothness of the elevage (400L oak barrels). The mouth is velvety. Despite the lack of sugar, you will especially like its dense structure, underlined by a touch of tanins, brought by the oak. At the end, the mineral expression of the volcanic soil is revealed…


Wine and Food Matching

After a carafage of this Savennières "Eclat de Schiste", its aromatic complexity and its balance will allow numerous food and wine matching, such as :

  • Fish or shellfish (lobster, shrimp...) with their creamy sauce,
  • White meats (Veal, poultry, rabbit) with creamy sauce, some “ris de veau”
  • Sautéed or half-cooked Foie Gras
  • “Boudin blanc truffé”…
  • Cheeses with “pâte dure” like Comté (24 or 36 months, old Dutch cheese…) 

This wine, very pleasant already, will favorably evolve over 10 years minimum.
